Weekly Menu on Monday: June 21st

Here's this week's menu:
  1. Hobo dinners - If you've never had a hobo dinner, or don't know what I'm talking about, let me introduce you to a super easy meal! In a foil packet (one per person), form a hamburger-like patty of ground beef (or you could use ground turkey). Season the meat (both sides!) with salt, pepper, garlic powder, onion powder, seasoned salt, etc. (whatever flavors you want really, but be sure to salt and pepper the patty if you don't add any other seasonings). On top of the patty, layer potato slices, onion slices, and carrot slices (or any other veggies you'd like - these are my favorites to use). Be sure to season all the veggies as you did with the meat. Once you've got all your veggies in the packet, seal the packet up, and cook in a 350° oven until the meat is cooked to your liking. These are a great camping/cookout meal - just throw them in the fire or on the grill. Hobo dinners are also a great way to get the kids involved - they can create their own packets.
  2. Red fish with cajun rice and a green vegetable
  3. Slow-cooker chicken tacos with mexican rice and charro beans
  4. Breakfast for dinner - Eggs, turkey bacon, and french toast
  5. Grilled steak, roasted corn-on-the-cob, and a green vegetable

Happy Father's Day!

appy Father's Day to all you fathers out there, especially my own dad, and my husband! I'm so thankful to have them in my life - I have absolutely been blessed by them!

Here's a set of photos I did for my husband for father's day . . . it was quite the adventure to get these photos taken especially since Ella would much rather throw the letters at me than hold them (I think she gets that from her dad!). :)

Proverbs 31:16

I am still not caught up from falling WAY behind in the series of posts about Proverbs 31 in the study that Kristen at Bringing Up Benjamin is hosting, but I am working getting caught up. I have been blessed by taking a deep look at these verses, and I hope you have also been taking the time to study these verses.

Proverbs 31:16: (NKJV) "She considers a field and buys it; From her profits she plants a vineyard."


An overreaching quality of the virtuous woman that is described in various ways throughout Proverbs 31:10-31 is the quality of being a hard worker. Proverbs 31:16 describes yet another way that the virtuous woman is a hard worker: she is a hard worker in her financial dealings. It takes a lot of effort to do the research necessary to make a purchase that will be profitable! The virtuous woman isn't simply satisfied with her earnings either - she puts her earnings to work for her future.

However, in addition to being a hard worker, another overreaching quality of the virtuous woman is also described in this verse: wisdom. She doesn't spend her money carelessly. She takes the time necessary to do her research - and her research pays off because her investment is profitable. But his wisdom doesn't end with her profits: she continues to invest wisely by using her profits to continue to provide for her family.

I'll freely admit that I have not (and still do not) always put forth the proper effort, work, and wisdom when handling financial matters. As I've gotten older, and wiser I suppose, I'm trying to make better financial decisions by exhibiting patience and self-control, as well as through good research in financial handlings.


Far Above Rubies

Weekly Menu on Monday: June 14th

Last week, I made my first attempt at completing a weekly menu (and sticking with it when it actually came time to make dinner!). I must say, I'm pretty proud of my first attempt. I made three of the dishes on my list. Now, only completing three meals doesn't sound like a big accomplishment, but last week was an odd week (we were out of town a couple of days, and had company in) so I didn't cook at home as much as I would like to in a normal week. So, now for this week's menu - two of the meals are repeats from last week because I still have everything I need to make those meals!

  1. Chicken Pasta Bake with a green vegetable
  2. "Quick" Lasagna with a green vegetable
  3. Pioneeer Woman's Crispy Yogurt Chicken with a green vegetable and potatoes- This recipe is SO good and easy! I usually just use chicken breasts instead of bone-in chicken.
  4. Ginger Garlic Pork with Sizzling Rice - This is a Guy Fieri recipe that I haven't tried yet, but looks delicious.
  5. Quesadillas with chips and homemade guacamole - I'm not sure what meat I'll use in my quesadillas yet (depends on what I can find at a good price at the store), but it will likely be chicken, beef skirt steak, or ground beef (cooked like taco meat). I'll also include sauteed onions and green peppers in my quesadillas.
